Carter, 60, has operated the business on weekends and during vacations from his job as a sales representative in the electrical industry. He had been contemplating opening a store for a while but had trouble getting a loan from a bank.
After being laid off from his sales job in July, Carter decided to empty his 401K retirement account and use the money to open the restaurant.
?I?m going for broke on it,? he said. ?Doing it that way I won?t owe anybody anything so it?ll be all mine.?
Carter prides himself on making eastern N.C. barbecue with a twist. Big Al?s uses George?s Sauces of Nashville, about 45 miles east of Raleigh..
?They actually use a white, distilled vinegar and then put apple juice and spices in it,? he said. ?Where as typical eastern North Carolina is in-your-face apple cider vinegar sauce.?
The restaurant will offer pork, ribs, chicken and beef brisket cooked on hickory wood, plus homemade coleslaw and fresh hush puppies. A barbecue sandwich will cost about $6.
?We don?t do the little bitty sandwiches,? Carter said. ?People, when they order one sandwich of ours, it?s plenty.?
When Big Al?s food truck isn?t attending weekend events around the Southeast, it can be found in the Capital Plaza shopping center in Wake Forest. Carter said he still expects to use the food truck for select big events and catering after opening the Forestville Crossing store.

Casey Kelly and his wife, who opened Pauper?s Books More in Clayton three years ago, are preparing to move into a space more than twice as large.
The current store, at 11801 U.S. 70 West, in the Clayton Corners shopping center anchored by Lowes Foods, is scheduled to close Oct. 7. Then the new spot will open Nov. 1, just a few doors down in the same strip mall.
The new, 3,000-square-foot space will include couches and an expanded children?s area. It also will allow Kelly to carry a wider selection of used books, CDs, DVDs and more.
One key to the store?s success, Kelly said, is that Pauper?s is able to compete on prices with Amazon.com and electronic books. Even with the financial trouble of big chains like Borders, bargain-minded book lovers still enjoy being able to browse, and Kelly said he?s built up a solid base of regular customers. Shoppers also can reserve books at the store?s website ( paupersbooks.com).
Kelly, a UNC Chapel Hill alumnus, previously worked at Nice Price Books in Raleigh.
?I used that time to apprentice, to see how to buy books and what sells,? he said. ?The owner told me to find a good shopping center with a grocery store and park there. I got a loan and followed my dream. Since Day One, we?ve been doing amazingly well.?
In Raleigh, interior design business Trends ?n Traditions recently moved its Raleigh store from High Park Village to the North Hills shopping center. New retail hours are 10 a.m. to 6 p.m. Monday through Saturday; design work is by appointment. The new address is 4209 Lassiter Mill Road, Suite 132. ? And Chipotle Mexican Grill opens its third location in Raleigh on Tuesday. The latest is across from the N.C. State campus at ? Hillsborough St., Suite 100.
